Pink Oyster mushrooms are known for their vibrant coral hue and their 'meaty' texture which allows them to hold their shape in stews or stir-frys. When cooked they are described as having a subtle 'bacon-like' smokiness which makes them a great plant-based substitute when pan-seared or roasted.
They also have potential health benefits- they are naturally high in lovastatin which is known to reduce LDL cholesterol. They also play a role in helping regulate blood sugar, as well as having a beta-glucan called pleuran which 'primes' the immune system ready to defend when pathogens are detected.
